My current favorite breakfast is these quick blueberry banana flax pancakes. I’ve been trying to get more flax seeds into my diet and these are a delicious and quick way to do it!

Banana Flax Seed Pancakes (serves 2)

1 ripe banana
2 eggs
1/4 c ground flaxseed
1/2 t cinnamon
1/4 t baking soda
Cooking spray
1/2 c plain greek yogurt
1 c fresh blueberries
2T maple syrup

1. Preheat a skillet over medium-low heat while you assemble the pancake batter.

2.In a medium bowl mash one ripe banana and add two eggs, mix until combined.

3. Add flax seed, cinnamon, and baking soda to the bowl and stir until well mixed.

4. Once the skillet is hot enough for water droplets to sizzle, spray with cooking spray and pour batter (for two large pancakes, use 1/2 cup measurements; for four pancakes use 1/4 cup measurements).

5. Cook for between 3-5 minutes or until bubbles form on top. Flip and cook for 2-3 minutes more.

6. Due to the banana and cinnamon in the batter, the pancakes will be browner than standard pancakes. They are not burnt and will taste delicious.

7. Top with the greek yogurt, blueberries and syrup.
